Ceylon Cinnamon powder is the only cinnamon that is considered to be “true cinnamon” or “real cinnamon”. This variety is native to Sri Lanka and Madagascar, whereas most other cinnamon varieties are native to China, Vietnam or Indonesia.
Ceylon cinnamon has a few differences that really set it apart from its close relatives. For one, this cinnamon has a much more mild and sweet taste than your store bought cassia cinnamon. The other main difference between Ceylon and Cassia or Saigon is their vastly different levels of coumarin content. Coumarin is a substance in cinnamon that, if taken in high doses, can cause liver failure. Ceylon cinnamon has extremely low coumarin levels, so if you are taking cinnamon on a daily basis for health purposes, this is your ideal choice. Although the other cinnamon varieties are often called for in recipes, they should not be taken in high doses daily.
