'Shroomy Belgian Waffles
Who doesn’t love a big Saturday breakfast, right? How ‘bout a nice big Belgian waffle, but one that is healthy and adds a little ‘shrooms to it?
Growing up, I have always been a waffle guy. If you have to you can swap this recipe for pancakes, though. I made this waffle recipe last week and it’s one I will be keeping around and I wanted to share it with you.
It only has a handful of ingredients, so it’s super easy to whip up. When you add our RISE Mushroom Blend to it, it adds a nice little chocolately, cinnamony taste to it. Very subtle, but then you get that focused energy from RISE that carries through the day. WIN WIN!
Let’s get to it, shall we?
3 cups regular oats
3 tsp baking powder
¼ tsp salt
4 large eggs
1.5 cups milk or non-dairy milk
½ cup coconut oil
2 tsp vanilla extract
2 scoops RISE Mushroom Blend
- Add all ingredients into a blender and blend until smooth.
- Pour about 1/3-1/2 cup batter into waffle iron and cook according to the waffle iron instructions.
- Remove waffle and load up with whatever toppings you prefer!
